Fall flavors are hearty and robust. Whatever the menu, fall meals are comfort foods that keep us warm during cool autumn days and delight the senses with their kaleidoscope of flavors.

Taste of Home Cooking School of Greendale, Wis., is ready to satisfy autumn appetites with recipes that feature a variety of fall flavors in a cooking demonstration scheduled for Tuesday, Oct. 3, at Memorial Hall, Third and National, Fort Scott, Kan.

"Our program is all about flavor," explains Tamra Duncan, a culinary specialist with the Taste of Home Cooking School. "I'll be recommending a trio of recipes that used brining -- a simple technique gaining widespread popularity. Traditionally, brining in a simple salt solution was a means to preserve meat, but today brining includes other ingredients that improve the flavor, texture and moisture content of lean cuts of meats," said Duncan.

Everyone who attends receives a free "Taste of Home Cooking School Brand Name Cookbook" that includes all the savory dishes prepared on the stage. Drawings will be held for several door prizes, and several lucky winners also will be selected to take home the delicious dishes Duncan prepares on stage.

"We are excited about co-hosting this special event with the Fort Scott Chamber of Commerce, said Julie Righter, of the Fort Scott Tribune/Fort Scott Countryside.

"Our staff is busy coordinating plans with local businesses that will participate in the festivities. Plan to join us for a two-hour program of fabulous fall food fare, helpful kitchen tips and serving suggestions," Righter said.

Tickets go on sale Monday, Aug. 28, at the Fort Scott Chamber of Commerce, 231 E. Wall St.: Fort Scott Tribune offices, 12 E. Wall St., Fort Scott; and Nevada Daily Mail offices, 131 S. Cedar St., Nevada. Phone orders will be taken at the Fort Scott Chamber of Commerce location only, at (620) 223-3566.
